What’s better than pecan pie? ⁣

… these SALTED CHOCOLATE PECAN PIE BARS (vegan, GF*) 😍🍫 Save this for a treat to whip out when you want to impress! ⁣

I made these bars using pantry staples from thesourcewestendbrisbane and my FAVE coconut condensed milk by naturescharm, which seriously made the most luxurious chocolate filling ever 🤤 The rich dark chocolate balances out the sweetness of the caramel and work so well with the nuttiness of the pecans 🙌🏼 You guys NEED to try it 💓⁣

Here is the recipe ➡️⁣

SALTED CHOCOLATE PECAN PIE BARS (vegan, GF*)⁣

Makes: 8 large slices ⁣

INGREDIENTS: ⁣

Shortbread Base:⁣
✅ 1 cup almond meal⁣
✅ 1 cup plain flour (can sub almond meal if GF ) ⁣
✅ 1 scoop vegan vanilla protein powder (I used macr0mike salted vanilla – discount code: “amb-chen”)⁣
✅ 1/4 cup pure maple syrup ⁣
✅ 1/3 cup coconut oil, melted ⁣

Choc Pecan Filling: ⁣
✅ 2 cups pecans⁣
✅ 100g non-dairy chocolate ⁣
✅ 300ml naturescharm coconut condensed milk ⁣
✅ 1/4 cup flour ⁣
✅ 2 teaspoons salt ⁣

✅ Extra pecans for decoration ⁣

METHOD:⁣
1. Prepare a square baking tin with non-stick paper. Preheat the oven to 180 degrees C / 375 degrees F fan-forced. ⁣
2. Make the Shortbread Base: mix all ingredients together until a dough forms. Transfer this as an even layer into your baking tin and use a fork to poke holes in it. ⁣
3. Bake the base for 10 minutes until slight golden⁣
4. In the meantime, make the Choc Pecan filling: In small pot on medium heat, melt the chocolate, then add in the condensed milk, flour & salt. Mix until smooth. Stir in the pecans, then transfer the entire mixture as an even layer over the shortbread base ⁣
5. Cover the tin with aluminium foil and bake it for 1 hour⁣
6. Remove from the oven & put the slice in the freezer for 1 hour to allow the filling to set before slicing ⁣
*Storage tips: in an airtight container in thefridge for a week or frozen for months ⁣
