WALNUT CARAMEL SLICE FUDGE (vegan) Think stretchy sticky caramel + fudge + short…

WALNUT CARAMEL SLICE FUDGE (vegan) 😍🍫Think stretchy sticky caramel + fudge + shortbread all in one decadent bite 🤤 ⁣

I used the new OAT condensed milk by naturescharm to create this treat! I love how the oat milk isn’t as heavy as the usual coconut varieties and has a subtle nuttiness which works so well with the oatmeal shortbread & walnuts!⁣

Here is the recipe ➡️⁣


Makes: 12 slices ⁣

Oat Shortbread Base:⁣
✅ 1 cup oat flour⁣
✅ 1 cup almond meal⁣
✅ 1/4 cup maple syrup ⁣
✅ 1/4 cup coconut oil, melted ⁣
✅ Pinch of salt ⁣

Walnut Caramel fudge:⁣
✅ 1 tin (3/4 cup) condensed milk (I used naturescharm oat condensed milk)⁣
✅ 1/4 cup cashew butter⁣
✅ 2 tablespoons coconut oil ⁣
✅ 1/4 cup brown sugar ⁣
✅ 1/2 cup walnuts ⁣
✅ Pinch of salt ⁣

Chocolate fudge topping:⁣
✅ 1/2 cup condensed milk (I used naturescharm oat condensed milk)⁣
✅ 80g non-dairy chocolate⁣
✅ 1 tablespoon coconut oil⁣

1. Prepare a square baking tin with non-stick paper. Preheat the oven to 160 degrees C / 350 degrees F fan-forced. ⁣
2. Make the Shortbread Base: mix all ingredients together until a dough forms. Transfer this as an even layer into your baking tin and use a fork to poke lots of holes in it. ⁣
3. Bake the base for 12-15 minutes until golden. Remove and pop this in the fridge to cool ⁣
4. Make the walnut caramel fudge layer: add all the ingredients except the walnuts into a small pot on medium heat. Bring to a boil, then reduce the heat to a simmer for 6-8 mins, stirring frequently to prevent burning. Add in the walnuts, then transfer the entire mixture as an even layer over the shortbread base.⁣
5. Bake the caramel slice again for 18-20 mins.⁣
6. Remove from the oven and allow the caramel to fully cool & set in the freezer for a couple hours ⁣
7. Make the chocolate fudge topping: melt all the ingredients together and whisk until smooth. Pour this over the top of the caramel layer. Return to the freezer to allow it to set before slicing ⁣
*Storage tips: in an airtight container in, fridge for a week or frozen for months ⁣
