SINGLE-SERVE COOKIES & CREAM CAKE (vegan, macro-friendly) You guys LOVED my carrot cake version of this so I’m back with an exciting cookies version!! Save this recipe if you are an oreo lover ✨ ⁣

Here is the recipe ➡️⁣

SINGLE-SERVE COOKIES & CREAM CAKE (vegan, macro-friendly) ⁣

Makes: 1 cake (cal: 280, P: 16g, C: 39g, F: 7g) ⁣

INGREDIENTS:⁣
✅2 tablespoons (30g) self raising flour⁣
✅1 tablespoon (10g) vegan vanilla protein powder (I used macr0mike – my discount code “amb-chen” )⁣
✅1 tablespoon granulated sweetener⁣
✅1/4 teaspoon vanilla extract ⁣
✅1 tablesooon applesauce⁣
✅1 tablespoon aquafabachickpea brine (*can sub applesauce)⁣
✅ 1 tablespoon almond milk ⁣
✅1 Oreo cookie, chopped into crumbs ⁣

Healthy “Cream Cheese” frosting:⁣⁣⁣
✅ 50g firm tofu ⁣⁣⁣
✅ 2 teaspoons maple syrup ⁣⁣⁣
✅ 2 teaspoons lemon juice ⁣⁣⁣
✅ Pinch of salt ⁣⁣⁣
⁣⁣⁣
METHOD:⁣⁣⁣
1. Preheat the oven to 175 degrees C/350 degrees F. Grease a ramekin with non-stick spray (mine was 8cm in diameter) ⁣⁣⁣
2. Make the OREO CAKE: In a bowl mix together all the cake batter ingredients until no lumps remain ⁣⁣⁣
3. Transfer this to the ramekin, bake for 16-18 mins until a knife inserted comes out clean. Remove from the oven & place the cake in the freezer to cool quicker⁣⁣⁣
4. Make the “CREAM CHEESE” FROSTING: in a small blender, add all the ingredients and blend until the tofu is smooth. (*note: if your blender is too big, you can multiple the recipe, make a larger amount & save the rest for something else) ⁣⁣⁣
5. Cut the cake in half, spread cream cheese in the centre & on top. Decorate! ⁣

Notes: ⁣⁣
– this cake is SMALL to fit macros, please multiply as you desire⁣⁣
– you can sub tofu for yoghurt or soaked cashews, but no promises ⁣⁣
– use a protein powder that you LOVE, as it is important for the flavour profile of this cake⁣
⁣⁣
