SINGLE-SERVE CARROT CAKE (macro-friendly, vegan, GF, oil-free) 🥕🍰 19g protein + 197 calories in the entire cake 💥 SAVE this for later & tag your carrot cake loving pals! 😍⁣⁣⁣
Due to high request, I’m going to make an effort to create one macro-friendly recipe a week ✨ Please comment any other single-serve recipe requests you want! ⬇️ ⁣⁣⁣
This week I’m sharing this tasty single-serve carrot cake + healthy cream cheese frosting 😋⁣⁣⁣
Here is the recipe ➡️⁣⁣⁣
SINGLE-SERVE CARROT CAKE (macro-friendly, vegan, GF, oil-free) ⁣⁣⁣
Makes: 1 cake ( cal: 197, P: 19g, F: 7g, C: 13g )⁣⁣⁣
Carrot Cake: ⁣⁣⁣
✅ 2 tablespoons (20g) vegan vanilla protein powder⁣ (I used macr0mike salted vanilla – discount code “amb-chen”) ⁣⁣
✅ 1 tablespoon (10g) coconut flour⁣⁣⁣
✅ 1 tablespoon (15g) granulated sweetener ⁣⁣⁣
✅ Spices: 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg⁣⁣⁣
✅ 1/2 teaspoon baking powder ⁣⁣⁣
✅ 3 tablespoons (45g) applesauce ⁣⁣⁣
✅ 15g grated carrots⁣⁣⁣
*Optional: chopped walnuts ⁣⁣⁣
Healthy “Cream Cheese” frosting:⁣⁣⁣
✅ 50g firm tofu ⁣⁣⁣
✅ 2 teaspoons maple syrup ⁣⁣⁣
✅ 2 teaspoons lemon juice ⁣⁣⁣
✅ Pinch of salt ⁣⁣⁣
1. Preheat the oven to 175 degrees C/350 degrees F. Grease a ramekin with non-stick spray (mine was 8cm in diameter) ⁣⁣⁣
2. Make the CARROT CAKE: In a bowl mix together all the ingredients for the carrot cake until no lumps remain ⁣⁣⁣
3. Transfer this to the ramekin, bake for 16-18 mins until a knife inserted comes out clean. Remove from the oven & place the cake in the freezer to cool quicker⁣⁣⁣
4. Make the “CREAM CHEESE” FROSTING: in a small blender, add all the ingredients and blend until the tofu is smooth. (*note: if your blender is too big, you can multiple the recipe, make a larger amount & save the rest for something else) ⁣⁣⁣
5. Cut the cake in half, spread cream cheese in the centre & on top. Decorate! ⁣
Notes: ⁣⁣
– this cake is SMALL to fit macros, please multiply as you desire⁣⁣
– you can sub tofu for yoghurt or soaked cashews, but no promises ⁣⁣
– use a protein powder that you LOVE, as it makes up the majority of this cake! ⁣⁣
