HEALTHY TRIPLE CHOC PROTEIN COOKIES (vegan, GF, macro-friendly, oil-free ) 🍪😍 Save this for your next snack prep! ✅⁣

This is one of my go-to healthy cookie recipes made from chickpea flour! ✨ This is definitely a “do not taste the batter before baking” type of cookie! (Because raw chickpea flour tastes terrible 🤮😂) So it requires a bit of self-control but I promise the final creation is worth it! ⁣

Here is the recipe ➡️⁣


HEALTHY TRIPLE CHOC PROTEIN COOKIES (vegan, GF, macro-friendly, oil-free ) 🍪🍫 ⁣

Makes: 8 cookies ( per cookie – cal: 121, P: 7g, C: 11g, F: 5g )⁣

INGREDIENTS: ⁣
✅ 1 cup chickpea flour⁣
✅ 1/4 cup choc protein powder (I used macr0mike hazelnut fondant ) ⁣
✅ 2 tablesooons granulated sweetener (I used natvialiving )⁣
✅ 1/3 cup cacao powder ( I got mine from thesourcewestendbrisbane ) ⁣
✅ 1 teaspoon baking powder ⁣
✅ 1/3 cup almond butter ( I used a combo of leftovers from 99th_monkey & hempfoodsaustralia ) ⁣
✅ 1/3 cup maple syrup (I used sugar free) ⁣
✅ 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water) ⁣
✅ 50g white & dark chocolate, chopped ( I use loving_earth that got from thesourcewestendbrisbane ) ⁣

METHOD:⁣
1. Pre-heat the oven to 180 degrees Celsius, fan-forced. Line a baking tray with non-stick paper⁣
2. Make the flax egg in a small bowl by stirring the flaxmeal with water. Set aside for 5 mins to thicken⁣
3. In a large bowl, combine all the ingredients except for the chocolate. Add in the flax egg and fold everything together until a thick & sticky batter forms⁣
4. Divide the batter into 8 even portions and use a spoon to form them into cookie shapes on the baking paper. (This can get a little messy) Allow 2 cm between each cookie.⁣
5. Sprinkle the chocolate chunks over each cookie ⁣
6. Bake for 10-11 mins. Remove from the oven & allow the cookies to fully cool down, it will firm up as it cools.⁣

*Storage tips: in an airtight container at room temp for 2 days, fridge for a week or in the freezer for months ✨ Let me know if you try these! ⁣
