FIT RASPBERRY CRUMBLE MUFFINS (vegan, macro-friendly) 😍🧁 with 166 cal + 12g protein – Save this tasty muffin recipe for your next healthy bake 🌟⁣

These muffins have been the perfect snack/dessert over the past week and bonus is that it’s packed with protein so it will keep you fuller for longer! 🙌🏼⁣

Here is the recipe ➡️⁣

FIT RASPBERRY CRUMBLE MUFFINS (vegan, macro-friendly) ⁣

Makes: 8 muffins (per muffin – cal: 168, P: 12g, C: 22g, F: 3.5g)⁣

INGREDIENTS:⁣
✅1 1/2 cups self-raising flour⁣
✅1/2 cup vegan vanilla protein powder (I used macr0mike vanilla buttercream flavour – my discount code “amb-chen” )⁣
✅1/2 cup granulated sweetener (can sub for 3/4 cup brown sugar) ⁣
✅1/2 cup applesauce ⁣
✅1 cup non-dairy milk + more if needed ⁣
*Optional: 1 teaspoon vanilla essence⁣
✅ 1/2 cup frozen raspberries + more for decoration ⁣

CRUMBLE TOPPING:⁣
✅ 1/4 cup almond meal ⁣
✅ 2 tablespoons vegan vanilla protein powder⁣
✅ 1 tablespoon coconut oil, melted⁣
✅ 1 1/2 tablespoons maple syrup (I used sugar-free)⁣

ICING:⁣
✅ 2 tablespoons vanilla protein ⁣
✅ 1 -2 tablespoons non-dairy milk ⁣

METHOD:⁣
1. Preheat the oven to 175 degrees C/ 350 degrees F, fan-forced. Prepare a loaf tin with non-stick paper.⁣
2. In a bowl, mix together the flour, protein powder & sugar ⁣
3. Add in the applesauce & non-dairy milk and mix until no dry flour remains. You may need to add a dash more milk if the mixture seems too dry ⁣
4. Gently stir through the raspberries⁣
5. Transfer the batter to the prepared tin ⁣
6. Mix the ingredients for the crumble topping until it sticks together like cookie-dough. Then divide & sprinkle over each muffin. Decorate with extra raspberries⁣
7. Bake in the oven for 15-18 mins until a knife inserted comes out clean and the crumble is golden ⁣
8. Make the icing by mixing the protein powder & milk together until smooth. Drizzle this over the top of the muffin⁣
9. Serve!⁣
*Storage tips: in an airtight container in the fridge for a week or in the freezer for months⁣
