EASY BEAN CHILLI BUDDHA BOWL 🌶🫑Here is an easy & tasty dinner or meal prep idea for you guys to whip up! ✨⁣

Chilli con carne is one of those dishes that is so versatile but always so delicious! In this chilli is made using purely whole plant foods and honestly you don’t miss the beef at all, the beans are so hearty, filling and carry all the flavour! It’s perfect to batch cook for meal prepping as well 🙌🏼⁣

Here is the recipe for the bean chilli ➡️⁣


Serves: 2-3⁣
✅ 1 x small onion, sliced ⁣
✅ 1 x small capsicum, sliced⁣
✅ 250ml vegetable stock⁣
✅ 1 x 400g tin of canned tomatoes⁣
✅ 1 cup of tinned black beans, drained ⁣
✅ 1 cup of tinned kidney beans, drained⁣
✅ 1 teaspoon oil ⁣
✅ Spice mix: 1 tablespoon ground cumin, 2 teaspoons smoked paprika, 1/2 teaspoon oregano, 1 teaspoon garlic powder, 1 teaspoon salt ⁣
*Optional: chilli powder to taste ⁣

To Serve:⁣
✅ Brown rice ⁣
✅ Pickled cabbage⁣
✅ Roasted pumpkin ⁣
✅ Fried tempeh⁣
✅ Avocado (I used lovacadobycosta hass 🥑)⁣
✅ Cashew Parmesan by pimpmysalad⁣

1. In a small bowl, add together all the spices for the spice mix⁣
2. In a pan on medium heat, cook the onion & capsicum in oil for 2-3 minutes until softened. ⁣
3. Add in the spice mix and sautéed for another 1-2 mins. Then add the beans, stock, canned tomatoes and beans. Bring the mixture to a boil then reduce to low heat. Simmer for 10 minutes until the chilli is thickened.⁣
*Storage tips: in an airtight container in the fridge for up to 3 days or frozen for months ⁣
