EASY 7-INGREDIENT OATMEAL CHOC CHIP COOKIES (vegan) 🍪✨ Save this recipe for the easiest tasty oatmeal cookie you’ll ever make! ⁣

When it comes to oatmeal cookies, I’m a chocolate > raisin type of girl! 🤷🏻‍♀️ But if you wanted to, you could even get creative with the mix ins and use nuts, berries, anything your heart desires really 😇 ⁣

I’m also quite picky and to me a good cookie needs to be crispy on the edges and soft & chewy in the centre! Here I used pantry staples from thesourcewestendbrisbane and I’m so happy with how these turned out! 😍 ⁣

Here is the recipe ➡️⁣

EASY 7-INGREDIENT OATMEAL CHOC CHIP COOKIES (vegan)⁣

Makes: 12 cookies ⁣

INGREDIENTS:⁣
Dry:⁣
✅1 cup self-raising flour⁣
✅1 cup oats⁣
✅1/4 cup non-dairy chocolate chips ⁣
*Optional: pinch of salt, other mix ins of choice e.g. nuts, fruits, candies ⁣

Wet:⁣
✅1/3 cup coconut oil, melted ⁣
✅2 tablespoons almond butter⁣
✅2 tablesooons non-dairy milk (or water) ⁣
✅1 cup sugar (I used 70% brown, 30% white) ⁣
*optional: 1 tsp vanilla extract⁣

METHOD:⁣
1. Preheat the oven to 180 degrees Celsius, fan-forced. Line a baking tray with non-stick paper.⁣
2. In a large bowl, whisk together all the wet ingredients until the sugars have dissolved⁣
3. In another bowl, combine all the dry ingredients. Add the wet mixture to the dry and use a spatula to fold everything together until no dry flour remains. Don’t overmix ⁣
4. Scoops even spoonfuls of the cookie dough into round dome cookie shapes. Spread on the baking tray, leaving at least 2cm between each cookie.⁣
5. Once the dough has chilled, bake it in the oven for 10-12 minutes until the outside is golden brown. Remove from the oven and allow the cookies to cool before removing. They will be very soft and firm up a bit as they cool. ⁣
**Storage tips: in an airtight container at room temp for 1 week ⁣
