BANOFFEE CRUMBLE “CHEESECAKE” (vegan, gluten-free) 🍌😍 Hellooooo 👋🏼 ⁣

Banana + caramel is one of the best dessert flavour combos! If you are in need of a decadent & delicious dessert to have ready in the freezer, definitely give this a try!⁣

I used naturescharm coconut cream in the centre layer to create a velvety, luxurious “cheesecake” centre! Here is the recipe ➡️⁣

BANOFFEE CRUMBLE “CHEESECAKE” (vegan, gluten-free) ⁣

Makes: 8 slices ⁣

Base & crumble topping:⁣
✅3/4 cup almond meal⁣
✅1/2 cup coconut flour⁣
✅4 tablespoons pure maple syrup ⁣
✅2 tablespoons coconut oil, melted ⁣
✅Pinch of salt⁣
*a dash of water if required ⁣

Caramel cheesecake layer:⁣
✅1 x 400ml tin of coconut cream (I used naturescharm coconut whipping cream)⁣
✅3 tablespoons of smooth peanut butter⁣
✅1 medium ripe banana⁣
✅3 tablespoons pure maple syrup ⁣

1. Line a small loaf tin with non-stock paper⁣
2. In a bowl, combine all the ingredients for the base/crumble until a cookie dough consistency. Spread 3/4 of the dough evenly to form the base, reserve the other 1/4 to crumble as the topping⁣
3. Make the caramel by blending all the ingredients blender until smooth. Transfer as an even layer over the base. ⁣
4. Sprinkle the reserved base cookie dough as a crumble⁣
5. Place the cheesecake the freezer overnight to allow it to set before slicing ⁣
*Storage tips: in an airtight container in the freezer and slice right before serving ⁣
