6-INGREDIENT COOKIES & CREAM PROTEIN TRUFFLES (vegan, macro-friendly) 🍫🍪 Save this EASY & TASTY truffle recipe for your next snack prep 👇🏼⁣

Being in lockdown has really given me a lot more time in the kitchen to tackle my list of recipe ideas, and these cookies & cream truffles were very high on that list! ⁣

I used the new macr0mike vanilla buttercream protein powder + pantry staples from thesourcewestendbrisbane including vegan white chocolate by loving_earth ❤️ ⁣

I’ve been trying to make small batch recipes to avoid ending up with lots of food 😂 but feel free to multiply this recipe if you want to make a bigger batch!⁣

Here is the recipe ➡️⁣

6-INGREDIENT COOKIES & CREAM PROTEIN TRUFFLES (vegan, macro-friendly)⁣

Makes: 4 truffles (per truffle – Cal: 220, P: 9g, F: 13g, C: 14g)⁣

INGREDIENTS: ⁣

Cookies & Cream centre: ⁣
✅ 1/4 cup almond meal⁣
✅ 1/4 cup coconut flour⁣
✅ 1/4 cup vegan vanilla protein powder (I used macromike vanilla buttercream – my discount code is “amb-chen”)⁣
✅ 2 tablespoons maple syrup⁣
✅ 2 tablespoons water (or plant milk)⁣
✅ 1 Oreo (choc biscuit portion only)⁣

Coating:⁣
✅ 60g non-dairy white chocolate⁣
✅ 1 Oreo (choc biscuit portion only)⁣

METHOD:⁣
1. Chop up the chocolate biscuit portion of two Oreo biscuits until it resembles fine crumbs. Set aside.⁣
3. Make the cookies & cream centre: Add in all the ingredients except for the oreo crumbs into bowl, and mix until a cookie dough consistency. Then fold in half the Oreo crumbs through the cookie dough. ⁣
4. Divide and roll the dough into 4 even balls. Freeze for at least 60 mins until the balls are solid.⁣
5. Melt the white chocolate and roll each ball in the chocolate until fully coated. Quickly sprinkle a handful of the remaining Oreo crumbs over the top before the chocolate sets.⁣

*Storage tips: in an airtight container in the fridge for up to 5 days, or in the freezer for months, allowing it to thaw at room temp for a 5 mins before serving ⁣
