These truffles make the perfect snack on the go or healthy dessert! They are filling, packed with chocolate and have a fun sweet nuttiness from the pumpkin 🎃 ⁣

Here is the recipe ➡️⁣

5-INGREDIENT PUMPKIN COOKIE DOUGH PROTEIN TRUFFLES (vegan, gluten-free, macro-friendly) ⁣

Makes: 8 truffles (per truffle – cal: 170, p: 12g, C: 9g, F: 9g )⁣

INGREDIENTS:⁣
Pumpkin cookie dough: ⁣
✅3/4 cup vegan vanilla protein powder (I used macr0mike salted vanilla – my discount code is “amb-chen”)⁣
✅3 tablespoons coconut flour ⁣
✅3/4 cup pumpkin purée⁣
✅1/4 cup maple syrup (I used sugar-free) ⁣
✅ 30g dairy-free chocolate (I used bennettonaturalfoods dark)⁣

Coating:⁣
✅100g dairy-free chocolate ⁣

METHOD:⁣
1. In a bowl, mix together all the ingredients for the pumpkin cookie dough until a cookie dough consistency forms⁣
2. Divide and roll into cookienballs and freeze for at least an hour until solid ⁣
3. Make the coating: melt the chocolate in bursts in the microwave. Roll the frozen cookie dough balls in the chocolate and return it to the freezer for 10 minutes to set the chocolate ⁣

*Storage tips: in an airtight container in the fridge for up to 3 days or in the freezer for months, allowing it to thaw for 5 minus before serving⁣
